Croquembouche

Croquembouche - Wedding Cakes and Birthday Cakes

One of the most skilled jobs for any patissiere is a croquembouche. In France many occasions are celebrated with this, and it is often used as a wedding cake. We also provide croquembouche for christenings, first communions and birthday cakes.

What is a Croquembouche?

A croquembouche or croque en bouche is a tower of choux buns filled with patisserie cream and dipped in caramel. Each bun is then built into a tower stuck with a little more caramel. The name croque en bouche translates into ‘crack in the mouth’. The texture of the crisp caramel, followed by the soft cream is what makes this cake so special. The cream can then be flavoured to add a little something extra. Flavours include

  • Vanilla
  • Lemon
  • Chocolate
  • Praline
  • Cointreau
  • Raspberry

The Croque en Bouche was wonderful, very well appreciated by our French family and was a source of intrigue for all of our guests. The flavours worked incredibly well together and the fresh raspberry coulis was delicious.
